I'd have to disagree with that one. I've been hunting since level 35 and there's certainly alot of fun in it when you find a similiar level thief. If you want to dominate trade routes however, then yes, 64+ is a good time to start.

Also, when you use a horse, it's not that difficult to stay in front of the popper. As long as he doesn't get in front of you, there's nothing to worry about.
God is unavailable right now. Can I help you?

But what about when you don't, and get lion shouted dead...

i'm a lvl 38 pure str archer and i've done many 3-5 stars by myself from dw to jangan and vise versa, simply STAY OFF THE MAIN ROADS, and plan ahead, marking your route and having proper amounts of pots and pills
(i've had lvl 2 hunter since lvl 35)

Honestly if your doing trading to get financially ahead it totally isn't worth it to do 1 star. It takes like 35-40 minutes even if everything goes right and u make like wat.. 40k?
But if ur doing it for fun, heres a few tips =)
1) Do a quick run through scope out the road from the ferry to Jangan as in Troy that is usually where thieves will pop you.
2) Do trades when pretty much nobody is online (right after they do the updates usually)
3) Use a horse
4) Ask for help if you see somebody going your way
5) Stay off the main road (walk in the tree n stuff)

Funny as it seems, it really works. im 5x and when i trade there's always some lvl 70 trying to pop me and my guildies. Then the crossing ferry's trick really annoys the hell out of them untill they walk off.
Lol. I keep following people that do it untill they stop, or I have spent all the money that I have stolen and is in my horse.
They eventually stop. This one guy just said GRR, terminated and ran away.

This trick is not good.
Popping is actually not easy when you're able to twist and turn (unless they have a gang of thieves on you). If the popper is in front of you, turn back. If he is behind you, keep going. If he is side by side with you, go forward and backward randomly, till you're always in front of him.

I just failed a 1 star trade yesterday. There was this gang of level 70 thieves spawning NPC thieves holding Polearms and stuff like that. By the time i spotted them it was too late, i happened to run straight into them. Using X-LArge potions to heal my horse was not enough and lost all my goods and some exp. So wasted.
