I would +10 anything before adding blues (exepct Immortal) or getting higher %, since if it fails at adding plusses I haven't used money on getting better stats yet.

imo adding immortal is worthless unless it's sox or you managed to get a 100% stat. Steady is always, but if it breaks.. it breaks. That's how I used to do it.

IF I ever plan on going over +5 I look for a wep that already has 2-3 immo.

Why? +5 will rarely cause any negative effects to items, even +6 or +7 for that matter. Anything beyond 7 is where you would want immo.
Then again this is coming from someone that never bothered, nor cared, for immo/astral/steady when going for 8 and 9 lawl. :P

That's why I buy 3 different ones +5 them have steady and hope for the best. Not a single one that costs x3 as much so I can fail again.
