Why not just use a finger?

Because the hooks can attach to your finger, which hurts. The hooks can only be removed by a doctor/special means so you'll be caught as a rapist. Plus you will need to pull the condom out, you may not have enough pull with a finger and it hurts.
A (long) pickle is good because it's soft enough for the hooks to latch on, but not so soft that it won't be able to detract with the condom (I think).

While a pickle and a banana share a lot of (good) qualities, the banana is a more practical tool.
