you can try the ceviche, it has ecuadorian, peruvian and colombian preparations. since im ecuadorian i only know the ecuadorian and the peruvian, but i researched the colombian preparation and it's quite similar.
you will need:
- 40 fresh prawns
- grated orange rind (1 orange)
- grated lemon rind (4 lemons)
- orange juice (4 oranges)
- lemons juice (1 lemon)
- 1 teaspoon of sugar
- 1 teaspoon of chili (very hot chili)
- salt
- 3 red onions sliced really thin
- 2 red tomatoes chopped really thin
- 2 tablespoons of coriander chopped really thin
preparation:
cook the prawns on boiling water for 2minutes. take them out and wash them with cold water, peel them but don't take the tip of their tails, take the black veins off the dorso. on a bowl, mix the prawns with the rest of the ingredients, put it on the fridge for +/- 3 hours and serve on a small bowl. it is also served with a portion of white rice to go with it.
besides the cooking/peeling of the prawns, all you have to do is mix all the ingredients. should be easy

note: ceviches can also be made with crab, octopus, fish (corvina), squid and many more. you can also mix them all up and make a mixed ceviche which is REALLY tasty
i've tasted the peruvian and the ecuadorian ceviches, but never the colombian. looks good
