I know you can save up to 300 cursed hearts, that means 30 potions. But if you go make those potions, can you collect hearts again afterward, or are you limited to only 30 potions?

You can only carry up to 30 potions (in bundles of 5).
but even if you use them all, you can take the quest again and again.
