Perhaps everyone has figured it out already, but in case you didn't, there's a way to skip the annoying skinning animation each time you shot down some poor animal. It also works for looting bodies. While on your horse, stand still next to the body, so that if you dismount, you are standing on it. Dismount, and when you see [Loot] or [Skin animal], simply press Y or whatever PS3 owners have to press, and it should skip the whole animation while you still get your stuff.
The animals will not get the skinned make over, but if you look at the minimap you can see which ones are not skinned yet. I found it rather handy in areas with cougars, because you can park the horse, dismount, skin, and get back on the horse and continue.
Then I'm not telling. That takes away the fun. Besides, you'll need them for the level 5 or 6 hunting challenge. Kill 2 cougars with knife and skin them. Have fun with that.

I got lucky, came across some random cougar chasing some guy. Shot it with a piston in the rear. It came after me and I finished it off right before it tackled me. Second one was more of a pain though. Tried same thing, that one ran for miles and miles. Chased the damned thing all over the great plains before I caught up and killed it. Not to mention the few I got killed by between the two. Nasty little ninjas.

I've got the sharpshooter and hunting challenges to go before I'm done with em.
Sharpshooter is pretty easy. The only trouble I've had so far is the hunting. Sometimes just finding the animals is enough of a challenge, then you have to kill them with a knife or something.
I've been thinking about putting a list together that shows what the generically named guns in-game might be modeled after in terms of their real life counterparts. Here's what I've got so far:
There's some neat history behind these weapons that places them right in the middle of the time frame RDR takes place in. The only gun that behaves oddly compared to real life is the Mauser C96. Its "full auto" capability is very slow, it should be shooting somewhere around 1000 RPM, and there should be a longer detachable box magazine sticking out the bottom. Might be because of gameplay issues, but if it were represented more accurately it would have made the gun much more fun to use.

I was really reluctant to do so, but I didn't find them to be much of a problem. I'm stuck at the kill-three-bears-with-one-shot-each, but I'm not that far in the story mode to have access to bear land. Those challenges are nice to do though. Love treasure hunting with those maps. OvO
Hunting wolves I guess, they are with alot and their stuff is worth alot too. Find a shop where they pay the most for it (or any other skin) and sell it.

Ah, then you're not even far enough for cougar cabin. Though I think it only becomes cougar cabin in multiplayer. I went there during my gameplay to do the knife the cougars challenge, and none were there. Then I remembered that every video I've seen of it, has been during multiplayer.

Still haven't discovered Cougar Cabin, but I did find Bear Boulevard yesterday. At first I thought there was just one, which I took down with a single bullet from the Buffalo Rifle, but as I was dancing around its corpse and already declaring myself Conqueror of the Wilderness, two of his BFFs suddenly showed up, and that was the end of the Conqueror of the Wilderness and Cisco horse.
