Simple solution: Survival mode with Too Many Items.
Creative mode, you can only place/destroy items: However, Redstone + Redstone torch or Pressure Plate (basically anything that works without having to hit it to activate) will do it.

aeonianrealms.com is a server I used to work for but some of my friends just acquired it from a the old owner.
Also I run a vanilla server at my house with my friend since he just started playing too so I want him to learn the right way before he adventures on to everything else minecraft offers.
2 friends and I have a private Feed The Beast server. FTB is a modpack that adds a TON of mods, making it much more fun to play IMO, but I understand some people prefer vanilla
i like the challenge with having nothing granted the server is slightly modded, /home function and creeps dont damage environment now but the mechanics of building are vanilla. iv build a lot of stuff so fast, though need to change the piston lighthouse as it kills the server can change that to redstone tourchs design
I'm not much of a builder, well not in the traditional way. I like building things, but more like systems that automate things and such. Or ofcourse mess around with redstone. One mod that gets added by the FTB pack is computercraft. It allows ingame programming, it's so epic xD One of the most fun and basic things you can do with it is make a password protected door.
Well sure on a 150x150 map with a billion redstone xD Computercraft adds a computer terminal (and more) where you can program things. Like real programming with if/then, when/else, true/false and all that stuff.
Vanilla? You can make it pretty easy on yourself if you have enchanted diamond armor. It will barely make a dent in your hp. Make sure to take regen potions and insta health. Speed helps too. If you dont have enchanted items it will be quite the battle.
Also make sure you are in an area you dont mind getting destroyed because it will cause A LOT of damage.
left it for now server is gona reset for 1.5 when we do finally upgrade been given god rights to piss about for now so making a building for the spawn area of the new server that will hopefully get copied accross
