Why are some thieves attacking non-traders and non-hunters unprovoked? do they get points out of it?

Those are NPC thieves, not player thieves.

NPC thieves spawn for each star the merchant contains. 1 star = 1 thief, 2 star = 2 thieves, and so on.

they attack what is the closest, but if a trader outruns them then they sometimes stay behind. Usually they go for the camel/horse first then trader /hunter

you forget the random >lvl 20 standing nearby who was oblivious as to the fact of a passing merchant, particularly standing near the western docks, getting ownd by a lvl 50 thief and losing his hard earned level, which quite co-incidentally entailed switching weapons and the seling of the old weapon... forcing him to look like a nub killing yeoha's in 4-5 hits b/c he cant deal more than 20 dmg a hit.
[sarcasm] now I wonder who this happened to just yesterday? [/sarcasm]
