if the idea of farming is to build up as many SP as possible, should i be leveling up as i go along? whilst keeping the 9 step gap.

For example, at the moment im level 19 and ive got pacheon and fire both at level 10 with everything selected in those levels, should i continue to do this? or should i be doing as little as possible. The only reason i've kept on adding them is to fight harder monsters.

Well, depends on how much patience u have.
If you have lots of that, and dont care staying on the same lvl for some time than make all the farming at low lvl like farming on bandits. and then make 0 gap until lvl 80 and lvl pretty fast.
if you dont have patience, i suggest u farm while lvling up. u'll lvl up a bit slower but at least u'll see some progress while making ur sp.
at the end, both of the methods take the same time.

theres gotta be some advantages to doing it a low level though, right? why else would people choose to do it that way.

Yes.
You're right there is! Basically you can kill monsters pretty easy at a lower level and its large amount of SP. If you continually 9 gapped then you would have great difficulty over all.
Farming at a lower level is fast and efficient. Power leveling would be a nice choice as well!
Having maxed out masteries makes it so much more easier leveling!

Bow + Den equalls farming heaven.

However if u keep leveling ull have to move on other monsters with slow spawn rate and that will slow you down. If u want to keep 9 gap i suggest to stay on bandits or plvl on ongs. If you want to level along with sp farm i suggest to choose smaller gap (you dont need 9 gap till 80 to be fully farmed). Use sp calculator to find out what gap you want
