When you are in a guild, it says "Donate GP" and then without even doing anything it goes up gradually. Am I actually giving away my SP to this DOnation thing?

no, your not... but if you click the heart in will (in the guild window)

Each SP you earn also earns you a GP for your guild, you can turn the SP you earn into GP as well but no, none of your SP is being sent to GP automatically.
