Assimilation occurs when a stone causes a blue of one stat to change. Every stone has a assimilation level, either:
10
20
or
30
10 being the best and 30 being the worst. In most cases you DON'T want your item to assimilate. Assimilation = Bad(mostly).

As to your question about the red. The red stat is gained when trying to + beyond +5(iirc), and you have no steady on the item. The red cannot be removed, but it MAY be reduced if you try to + again without steady, then again the value gained is completely random.

There is 5-40%...

Well as far as I know... I've made/bought 5%'s and unfortunately made a 40% >,< sadly... but I used it on my weapon and it worked!

I have only seen from 0% (astral/luck/steady etc.) to 35% with idd increments of 5% ^__^
