I know that Armor is good for pure INTs because of it's strong phys. defense & garments are good for pure STRs because of the mag. defense. but I've always wondered, is Prot good for either build?

Yes. I've seen highly succesful INT's in protector and STR's in protector.
Generally, capped INT's don't wear armor, because they get killed by other INT way too fast. Protector is decently good for both.

Yea Protector is good for both builds. I choose protector over everything now

+1, 10% increase in speed and 10% reduction in mana use, it's great for both builds, and honestly, protector sets look mad sexy.

Yeah it comes down to personal preferance. The difference in defense can be negated depending on what force trees you have as well.
