Do accessories like rings, necklaces, and earrings do anything for your defense? I see the stats like Physical and Magical absorption, but I don't know what they do. I am wondering because I am level 33 and I'm wearing level 8 rings with +3 INT on each one. If I replaced them with level 32 rings would I take less damage?

Yes, you will take less damage with better and higher level accessories. You can test this yourself and see the actual difference by having a monster or player attack you with and without them.
