how is the Blocking ratio calculated?

ie, if your shield is br10, is that a 10% chance to block an attack?

then, take into account the bicheon passive (increase BR by 1%)

would that increase 10% to 11%? or would it be 1% of the 10%, thus making it 10.1%?

I have a feeling its the latter, otherwise 80bicheon would mean a 90% BR, rather than a 18BR. but even then, i think the first part is wrong, coz a BR20 shield with bicheon 80 would be 36% blocking. which be insane. (then if they do that 15s buff to increase it even mores...)

The BR of a shield is basically a %, for example a BR 15 Shield would block 15% of opponents hits. Im not too sure about the passive though...because i dnot use a shield..

Br10 is 10% blocking. The passive adds to this. At lvl 80, the passive, shield protection lvl 8 gives you 9%. So even with a br20 shield, you only get 29% blocking probability.

The buffs are additive (giant shield lvl 1 would add 34% to your say br20 + 9% passive, making you block 63% of the time), but remember that it is only specific to phy based attacks. Ie, your br taking from the example would be 63% against phy attacks, but 29% against magical.
