After Sp Farming and achieving the sp for your build in the stronghold, can i stop farming and turn my gap to 0 and just lvl up to the lvl that you want your char in?

sure,if u think ur sp is enough for future,actually u can farming on the way,just keep ur lvl gap between 4~6,but its may cause level slow

That's exactly what you do. Once you have all the SP you need, just 0 gap and lvl.
