I don't think anyone exactly knows how damage is calculated, but it is certain that higher attack rating causes more damage.
But just go check it out yourself, that always works the best. Just go write down damages or something and see for yourself.

You should definitely get the white/blue hawk. The Black hawk is extremely useless. It will fly to the opponent and just deal crappy damage. A wolf is better.

Attack rating helps your hits be closer to your max damage.
On the other hand, parry ratio helps make the hits you take closer to the lowest damage.

Indeed. Attack rating doesn't actually increase the damage you do per se, just pushes your hits closer to your max damage.

As an example, if you have a bow that has a physical attack value of 80-100, your actual damage could be anywhere between that figure. The higher your attack rating is, the more often you will hit closer to 100.

However, if you aren't a bow user (you don't say in your post) you may want to reconsider whether it's work spending the SP on Pacheon skills so you can get the hawks. It might be better to look for a weapon with high attack rating on the stalls.

Attack rating isn't only important for a Bow char. A Nuker's damage is also calculated with Attack rating and their damage difference between min and max becomes higher the more you lvl up!
So actually ALL characters need as much AR as you can get.
