I use to be able to do that easily but now that I've set up e-mail verification... the option to change my e-mail info is no longer available. I'd like to know (1) If I can "un-register" from this e-mail verification service then reinstate it after changing my e-mail info or (2) Is there another way to modify my e-mail info that I'm not aware of.....

No you can't un-do that verification process so you can't change your email anymore.
