Well you do have the ability to open a stall outside of town. So if the server only sends you stall information, you won't be able to see an angry mob of earth taoists coming after you.
Not that I stall outside of town, but I've seen people do it... I guess it serves them right if they die.
I do like the idea of offline stallers. As someone above mentioned, if someone opens a stall and disconnects, you would see their character drop to a low poly model and have no animation. You could still enter the stall, leave messages, and buy their stuff. They just can't respond to you until they come back online (bringing their character back to full poly and animated.)
A few other things that would be nice for a stall (but I don't think they'll get implemented):
1. Ability to split stacks of items that are in your stall (or inventory) without closing. Selling 500 Wind2 elements and want to split out 200? You got it!
2. Ability to do an exchange with someone while in a stall. I could be selling my 500 stack of wind2 and someone wants just 100.
2.a Item 1 could take care of this. Someone wants 100, split your 500 stack for them.
2.b Exchange could be good if someone wants to give/sell you something while your stall is open.
Oh and I also wish my stall-on-a-camel could actually MOVE! haha
