If you put lettuce in your sandwiches and you put the lettuce under something oily, the lettuce will probably wilt and be all weird after a while. It's generally a bad idea to put lettuce under mayo or any oily meats to avoid this.

Does matter, the taste is based on the order of ingredients. Certain things activate taste differently in the rest of the ingredients. Which is why burger companies are so anal about in what order their sandwiches are put together.
