Don't kill me if I'm in the wrong thread to ask this, I've recently hit a dead point where I have no more tv shows to watch and someone brought up cowboy bebop, inyuasha, FMA etc at work today and I remembered how awesome those shows were when I actually watched them. So my question is what are some anime shows that you guys consider to be very good or "staples" in the genre that I should watch?

FMA Brotherhood is really good. You probably want to watch a couple of short animes instead of the ones that are still ongoing.
Samurai Champloo is one of my favourite. I love Initial D, but you'll have to get used to the 90's animation style.
I've been watching a lot of tv shows lately though:
Game of Thrones
Arrow
Young Justice
If you like the super hero shit, I think Young Justice is really well made.

Well obviously neon genesis evangelion haha. Another one is S-CRY-ED or some shit like that, its not that well known, but it used to be on toonami back in the good ole days

Code Geass
Fullmetal Alchemist (the first one, not brotherhood) + Conqueror of Shamballa movie
Steins;Gate
Noein
Uchyuu kyoudai
If you're entertained by delving into concepts I'd also recommend 'The Melancholy of Haruhi Suzumiya'. It's not really for everybody. I tend to view it more as a documentary than a real anime but it's still quite good if you have the patience for this stuff. Especially watch 'the disappearance of Haruhi Suzumiya' movie once you're done with the anime. It was a really good movie

But why don't you like FMA: Brotherhood.. clearly its the better of the two.
Brotherhood:
- Worse animation
- Worse combat and use of the mechanical arm.
- Less serious/dark/relateable themes
- Fairly generic ending
- less blood / gore -> I hate censoring
- Ed never even had a full fight in brotherhood. He was always interrupted or aided by someone D:

FMA doesn't follow the manga (Post-Greed).
FMA: Brotherhood follows the manga more closely. I found Brotherhood's story much more enticing.

Brotherhood was disappointing to me.
Anime originals tend to be better than animes that follow the manga strictly.
